The International dry wines are produced from grapes grown in specifically established vineyard sites in the Rhine valley. The grapes are harvested, gently pressed and cooled to 40° F using a tank press and held in the tank for two days to settle. The clear juice is then racked off and placed in temperature controlled stainless steel fermentation tanks for about three weeks. Fermentation takes place at 60° F utilizing several yeast varieties to bring out the optimum varietal characteristics. Approx. 25 % of the wine undergoes malolactic fermentation to soften the acids and add complexity. The result are elegant and stylish dryer wines.
